The Flavours of Suffolk

"A few years ago in an interview I was quoted as saying “just because it’s local doesn’t mean it’s good”, how wrong! With every year that passes I find new suppliers and produce that keeps my excitement and passion alive.

My most recent find being the Suffolk Food Hall located just under the Orwell Bridge. It is there I was able to source Suffolk Rose Veal from Halesworth and the home cured Bresaola - no wonder he is butcher of the year.

For fruit and vegetables I use Marksman Produce, based in Bury St Edmunds, they must be doing something right as they will be opening up in Ipswich soon, a brave move in these difficult times.

For years I was using a major catering fish supplier then Wyken Provisions came along, a small operation going to market daily and supplying me with some of the freshest fish I have ever seen, wild seabass and Aldeburgh cod for example. For a few months of the year we will use Oysters from Orford.

Some other favourites of mine are Denham Estate for their venison and rare breed Red Poll beef. Our pork is always free range from Blythburgh.

Even our dairy is locally sourced from Marybelle who also supply us with Suffolk Meadow ice-cream. Marybelle was set up by an enthusiastic group of farmers recognising the importance of fresh local produce to their community.

So really I would like to strike my previous quote from the record. Suffolk has some amazing produce which has helped to get the Angel where it is today.
